recipe: Pita Bread from Smitten Kitchen
Pita bread! It sort of shocked me when I stumbled upon a recipe for pita bread, because I have never considered it a bread that you can make at home. The recipe said that pita bread isn't much harder than pizza dough - and since I make home made pizza for us for dinner about once a week, I pretty much got up and started the dough that second.
Well...It's not anywhere near as easy as pizza dough. This dough, you knead it - it rests - you knead it again - it rises for 36 hours - you separate it - it rests - you flatten it - it rests - you bake them (one at a time if you, like me, don't have a pizza stone and have to use a super hot iron skillet instead) - and after all that, your delicious little pita breads still don't puff up. Mine just didn't. I tried extra water to get them moist before sending them into the oven, but that didn't work. Lots of little bubbles - but no telltale signs of ballooning.

As an aside - my blog right now is not looking it's best. It's in a sorry state, and I'm working at fixing it up to look the way I want it to look - but it just didn't feel worth it to wait until it was looking pretty again to post when I had some things to say now. So please, look past the weirdness for the time being :)
